Stephanie's New Job

After a grueling 3 years working in the ER (and through a pandemic) Stephanie has landed a new job! School Nurse! This will definitely help with our family dynamics and childcare issues. Culinary Mystery

Here on the ship we have a smaller galley for individuals and families that want to cook their own food. As an inheritance of small tools & devices from the 'cleaning out' of that area I have acquired a kitchen 'tool' that has been a mystery so far... (you can click on the pictures to see them bigger) I asked (by email) a good friend Bob A Hunger Artist what did he make of the picture I sent him to which he sent out an email requesting the help of several of his food-centric friends. In addition to this, he also posted this on his blog (which by the way gets way more traffic than my site does, by 'food' people at that!), and right away (or at last count) the first original post garnered 28 comments, mostly suggestions and humorous cracks. Teres Major Steak

I remember back in the day (2006-2007) catering in East Texas finding out about this muscle in the cow between the shoulders or shoulder blades called terse major. It is a seldom used muscle second only to the tenderloin filet in tenderness. It is also referred to as a shoulder tender. If sliced into medallions, they are appropriately named petite tender medallions. Also known as (AKA) petite beef tender, beef filet, chuck tender steak...the list goes on. But with great beef flavor, a good chew/bite that's tender, and a fraction of the cost of tenderloin you can't lose on price and flavor! Back then we bought it for $2.80 a pound. And it was a hit! It's said you can cook it all kinds of ways but the most successful way we found to do it was to rub it down (whatever rub mix or seasoning you want to use) and sear it on the grill or in a pan, finishing it in the oven to a medium rare. Oven Cooking Ground Meat

I have worked in some pretty small kitchens from time to time BUT have never failed to figure out how to complete a scheduled meal. A long time ago I developed an easy, simple way to cook bulk ground meat in a commercial oven using little supervision and a potato masher. Why would this be a useful thing to know? Not all kitchens have large braising pans, electric skillets, or enough pots to cook it on the stove. I use 4 inch chafing dishes/hotel pans and cook 10 to 15 pounds of meat in each one. Doesn't matter if its ground beef, ground chicken, ground pork, sausage... Start with about half an inch of water in each pan...here I have 2x10# (2 packs of 10 pounds each) of Ground Beef (80/20 meat fat ratio). See my water pitcher in the background? Take the meat and spread it out in pan. You can do this quickly it does not have to be "just so". I have a commercial convection oven that I set to 375 Fahrenheit (fan on low). Mexican Chocolate Caramel Cookies!

These Mexican Chocolate Carmel Cookies are made with the caramel candy we made in our last video! Stephanie found an awesome "from scratch" cookie recipe that she modified to make it her own! When you watch the video you will see HOW and then WHEN to add them in. Replace the chocolate chips with 2 discs of Mexican Chocolate chopped up. Add a tablespoon of instant espresso powder to your cookie dough. Add your caramel candy into the middle of the cookie dough. Watch our caramel candy video. If you're still not convinced to try it yourself then those little square plastic-wrapped caramels from the store will do.
