Mimi & Papas House!

Most Saturdays I bring both of my boys to Frizzles to meet Mimi & Papa (my parents). Sometimes my wife (Steph) comes or is sleeping in from working the night before. Mimi and Papa enjoy time playing with Tytus (now 2.5) and holding Ezra(and playing as much as a 2 month old does).

Frizzles is like a Dairy Queen, but not. They have frozen custard, not soft serve ice cream and the menu's have similar things by the way of chicken fingers and burgers.

On Saturday morning they open fairly early for not serving breakfast. I think store hours they open by 9 or 9:30am and we show up between 930 and 10am. We are usually the only people there the first hour or so and Tytus is rip roaring and running around the restaurant inside. We order a drink and get a fry, or custard to share with Tytus. Occasionally we give him 'pieces' (pennies or change) to put in the big plastic Children's Miracle Network container which has your change go round & round and thru 'mousetrap' or Ferris Wheel kind of contraptions before finally falling to the bottom. Quite entertaining for him. We hang out for awhile and 'catch up' then go our separate ways. A good time is had by all!

What has happened over time is Tytus has gotten so used to seeing Mimi & Papa at Frizzles (and have been there more times than their actual house) that Tytus now thinks Mimi & Papa LIVE at Frizzles! And if that's not funny enough...every time we drive by Frizzles he starts hollering 'Dat's Mimi & Papa's house, Mimi & Papa's house!!!" and will continue to do so till I agree with him!

New Son! ~ New Job!


Right now I am at home happily enjoying time with my newest son, Ezra Michael! I have two boys now and I am extremely happy! Ezra Michael and Tytus Nathaniel!

In August I start my role as the new Food Service Director/Executive Chef at a local private Christian academy that's also attached to a church. Its a start-up, meaning they have a brand new commercial kitchen (its only a few years old) that is used by the church for conferences and events but have 'just arrived' at a place where its time to really kick it in gear and 'take it to the next level' by offering school meals and other events on a regular basis.

In between feeding the new baby (and he eats A LOT) and spending time with Tytus while he adjusts to having a baby brother my wife allows me to work on menu's, a small-ware order that's pending, paperwork...and getting ready for the main priority, health department inspection. We just need to vent and put an exhaust fan in a pantry area that will house another 3 door commercial refrigerator.

Mens Retreat Menu

WOW!  So things have been really busy lately...this month, weekend of the 4th, 5th, and 6th we had a men's retreat and I was cooking for it.

This group is mostly 'steak and potato' guys and so I planned my menu accordingly!  In addition to that we watched the Alabama vs LSU game which was the only sad part of the weekend (LSU won). But I tried to have an amazing line-up of food for the game.

Joy of Coffee

This coffee shop in Dublin Ireland (not to far from the famed Temple Bar) was a great little 'hole-n-wall' place to take a break and have some lunch.

Sandwiches, soups, and various other offerings.  Besides coffee there were plenty of tea choices...One that I remember right away was a green tea with mint and coconut.  That hit the spot as we were there during winter time.  Warming the cold body!

I  posted the picture to simply say the name of this place says it all for people like me~ Joy of Coffee!

What are some of your 'hole-n-wall' coffee places, joints that you like?  What makes them special?  And lets steer clear of the ones in Amsterdam!

It is over

The last 2 weeks have been a fog. I am exhausted, 10 months of an all-out sprint just feels too long... but the joy in my heart says it was worth it.

The wards are closed, the last patients left today, and now it is over.

Exhausted or not, it is over.

The memories have been made, the babies have been healed,

the patients have laughed, cried, and lifted their voices to our God.

The kids have played in the hallways, ran around with stickers on their heads, and given us much needed cuddles.

The women have knitted hats, blankets, and socks.

The men have played countless hours of checkers, Jenga, and Uno.

We have sung

Great things He has done,
Greater things He will do.
Unto the Lord be the glory,
Great things He has done.


and have meant every word.

We have sung

It is raining all around me,

I can feel it,

It's a lot of rain.

I asked Jesus to bring more rain

until we are full,

until we are full of a lot of rain.

And knew it was not talking about water coming from the sky,

but of God Almighty's blessings in our lives.

A ward, B ward, C ward, D ward, and ICU are all packed up.

The halls feel desolate.

I keep waiting to see Micky cruising down the hallway with his makeshift car.

There are no Mama's sitting by the stairway chatting with those who pass by.

The translators  have turned in their badges and have walked down the gangway for the last time,

It is over.

I am tired.

But satisfied.

We did our best,

more than our best.

We loved, cried, played, and gave the best care anyone could have given.

It is over.
