The Bcookin Show Too! (Pizza)



Tytus and I have made some improvements. I am getting a little better at editing and using the "thumbnail, end screen, subscribe button, watermark, and next video/playlist" add-ons for Youtube.

In this next video you may recognize some older clips that I pieced together. Eventually we will break it all down in newer shows but for right now we are getting the feel of things. 

What does that mean? we will video more technique and recipe breakdown. Showing you how we do it.

Tytus Birthday Cake!

 Last Sunday my oldest son Tytus turned four years old. The theme of his party was Jake and The Neverland Pirates. Pictured here is Bucky the pirate ship that sails around Jake, Izzy, Cubby, and Skully. Made of chocolate cake, various candies, a peanut butter cup crows nest, and a few unedible parts like poster board sails and a dowel rod mast. Yeah, he was super excited about it!
[no, I don't do this every year...next year will probably be store bought, or my wife will make it! LOL - then again, who knows? Kids can be very persuasive.] 

Below is the Dinosaur Train cake I made for Tytus 2nd Birthday. This one is unique in that I made my own fondant out of a marshmallow recipe.  This wasn't the first Train cake I made though, the first was on a ship in Liberia, West Africa for some Brazilian friends of mine at this link: Train Birthday Cake (Estevam turns ONE!)

Men's Retreat

Weekend before last we started our annual men's retreat on that Friday night. I was suffering with a bad hack that I just could not cough past or get better. Unbeknownst to me I was developing or already had pneumonia. It was a rough weekend but a great time!

It was the standard menu (as in almost identical to last time)...man food. We started Friday night with grilled ribeye steaks and loaded baked potatoes. Yes, we had some veggies. Broccoli. And some real nice yeast rolls. Followed by apple and pecan pies served with vanilla bean ice cream, some of that 'all natural' stuff.

Saturday morning we used the leftover ribeye's to cut up as tips and cut & fried the baked potatoes from the night before. Also served bacon, eggs, biscuits, sausage gravy...had butter, jelly, jam...you know all the extra stuff with coffee, milk, and/or orange juice to drink.

Lunch was pretty simple, meatball or kielbasa sub sandwiches with chips.

I was going to do nachos mid afternoon but everybody was still so stuffed I just added them to the dinner menu. We had a late dinner that night about 730 or 8pm I think. We had Nachos, hot wings, and homemade pizzas! And of course anything else left from all the other meals were thrown out there too! The remainder of pies And ice cream came out again afterward.

The funny thing about the equipment there in the kitchen is sometimes the ovens are a bit quirky. Last time we did pizzas it was a two step process...the oven was hot enough to cook them but left the bottom soggy, so we threw them on the flat top grill for awhile and it seemed to remedy that. But, my right hand man last time (PW) was not going to be there for the dinner this time!!! So he went around telling everybody about how I was going to make my homemade pizzas then he split on me!!! LOL

BUT I figured out a way to do it and pulled it through even a little easier than last time and with crispy crusts! I started making all crusts that afternoon after all my dough balls had ample time to relax. Then I started shaping my crusts and par-baking them on sheet pans to a light golden color/crust. Later that evening I just sauced and topped my par-baked crusts and they had enough structure I could finish them straight on the oven rack which produced a nice crispy crust on bottom without another step in the process. Success!

Sunday morning is always simple, homemade cinnamon rolls and coffee...then cleanup and off to church service!

Everything came out great!

This year my sous chef, Roberto, was there attending the retreat but he still helped out! And thanks to several other men at the retreat who helped! ~ Always a great group of guys.

First Day Lunch Menu

Today was our first day out on the new menu of the new school lunch program! Busy!

**Yeah, this is probably not my best picture. I got some weird looking smile on my face which makes me look goofy! [[Shrug]]**

We had Mediterranean style chicken wraps with veggies and hummus today. Man! I feel kind of embarrassed that I didn't even remember to get a picture! Right now my sous chef Roberto and I are running the show in the kitchen. We feel like everything went pretty smooth today but we know for the office and administration it was pretty crazy trying to get all the orders in!

We have four lunches. The daycare runs infants to k4 and they eat at 11:00am. Then the school runs three lunches as follows: k5-2nd grade 11:25am to 11:55am, 3rd-6th grade 12:00pm to 12:30pm, 7th-12th grade 12:50pm to 1:20pm.

Its a bit unusual to me to have four lunches but I think its an excellent combination of fitting each group of kids thru the cafeteria in an expedient manner and managing the quality & volume of the food for each group. If your running behind this schedule gives you a chance to catch up before the next lunch comes thru and not bottle neck by trying to get the total amount of food out at one time! The kitchen is limited in space in both storage and physical work area.

I wanna give a shout out to my man Roberto! Excellent job today! I know its a steep learning curve...but I'll try my best to keep you from cutting off a finger or two!

Mimi & Papas House!

Most Saturdays I bring both of my boys to Frizzles to meet Mimi & Papa (my parents). Sometimes my wife (Steph) comes or is sleeping in from working the night before. Mimi and Papa enjoy time playing with Tytus (now 2.5) and holding Ezra(and playing as much as a 2 month old does).

Frizzles is like a Dairy Queen, but not. They have frozen custard, not soft serve ice cream and the menu's have similar things by the way of chicken fingers and burgers.

On Saturday morning they open fairly early for not serving breakfast. I think store hours they open by 9 or 9:30am and we show up between 930 and 10am. We are usually the only people there the first hour or so and Tytus is rip roaring and running around the restaurant inside. We order a drink and get a fry, or custard to share with Tytus. Occasionally we give him 'pieces' (pennies or change) to put in the big plastic Children's Miracle Network container which has your change go round & round and thru 'mousetrap' or Ferris Wheel kind of contraptions before finally falling to the bottom. Quite entertaining for him. We hang out for awhile and 'catch up' then go our separate ways. A good time is had by all!

What has happened over time is Tytus has gotten so used to seeing Mimi & Papa at Frizzles (and have been there more times than their actual house) that Tytus now thinks Mimi & Papa LIVE at Frizzles! And if that's not funny enough...every time we drive by Frizzles he starts hollering 'Dat's Mimi & Papa's house, Mimi & Papa's house!!!" and will continue to do so till I agree with him!

Frozen Bananas

Waffles this morning! I know most people have already shared the tip about freezing bananas before they go bad but in addition to that you can just throw them directly in the freezer with peel on. No reason to cut them up, wrap them, or put them in a bag. Take banana or bananas out and microwave in 30 second increments. Then squish bananas out of peel like getting toothpaste out. Easy banana that is almost purée texture when adding to mixes such as pancake, waffle, muffins...you get the idea.

Ciabatta, Pizza, & Yogurt Bread

I usually try to get things done in batches for freezing since I have two young children. This morning after batching some banana waffles (made from those black bananas you throw in the freezer before they really go bad) I started several doughs.

Later tonight we will be having guests over for pizza (on the grill unless raining) and salad. Then at a later time I will bake off the dough I have for ciabatta. In Italy the ciabatta goes from crunchy crust and porous chewy crumb to the more dense heavy crumb. I have a high water content in my dough and am going for the crunchy, porous, chewy version. Yogurt bread is just something I am experimenting with. I like to adjust water content, ingredients, knead times ...mostly just to entertain myself and have fresh bread while figuring out what it does to the texture, crumb, and overall taste among other things.

New Son! ~ New Job!


Right now I am at home happily enjoying time with my newest son, Ezra Michael! I have two boys now and I am extremely happy! Ezra Michael and Tytus Nathaniel!

In August I start my role as the new Food Service Director/Executive Chef at a local private Christian academy that's also attached to a church. Its a start-up, meaning they have a brand new commercial kitchen (its only a few years old) that is used by the church for conferences and events but have 'just arrived' at a place where its time to really kick it in gear and 'take it to the next level' by offering school meals and other events on a regular basis.

In between feeding the new baby (and he eats A LOT) and spending time with Tytus while he adjusts to having a baby brother my wife allows me to work on menu's, a small-ware order that's pending, paperwork...and getting ready for the main priority, health department inspection. We just need to vent and put an exhaust fan in a pantry area that will house another 3 door commercial refrigerator.

New Direction...and more focus.

Alas, my blogging was more frequent and intense years ago...but now it goes in spurts.

I have been procrastinating because I have a couple of big changes coming up in my life.  Another baby boy, Ezra, will be coming in July and another change I can not announce until I complete some previous commitments and give notice in June. (but if you email me on Facebook I will tell you)  Some of your already know (close friends and family).

Leadership Appreciation Dinner

First I must confess...I need to get better at remembering to take pictures, or at least acquire some that others took so I can show you examples of the menu's or food I post here.  I don't always do that, or have the pictures to do it!

Our church usually has an appreciation dinner for the different leaders of this and that like sunday school, children's church, small groups...things of that nature.  I cooked the main food for it the weekend of November the 13th.

Mens Retreat Menu

WOW!  So things have been really busy lately...this month, weekend of the 4th, 5th, and 6th we had a men's retreat and I was cooking for it.

This group is mostly 'steak and potato' guys and so I planned my menu accordingly!  In addition to that we watched the Alabama vs LSU game which was the only sad part of the weekend (LSU won). But I tried to have an amazing line-up of food for the game.

What's cookin' lately!

When I came back to Alabama I needed a job.  So when my other options fell thru and time was running out I went to work for a company I had worked for before.  The pay is OK,  the hours are long but only Monday thru Friday, and they were happy to hire me back because of my integrity and good work ethic from before...But it's not been enough.

Culinarily this job possesses nothing for me (pause to feel the emptiness).

Lately, I have been connecting with other like-minded people and really scoping the job opportunities ( which are few and far between) to get back to what I love.  The word 'networking' comes to mind...

Rare Sweet Potato Found!

Found in captivity, the rare and elusive Grandaddy Long-leg Sweet Potato!  Named after the Grandaddy Long-leg spider for its single unit body and multiple spindly 'legs' growing out of it.

Unlike rare animals that are usually found in the wild, this sweet potato is found in the captivity of homes, long forgotten and left in bins or cupboards never to be seen again until they start to rot and stink!

I ran upon this rare species in an even rarer spot than usual...it was found in a home that cooks and eats lots of food and hosts many guests each week.  I don't want to reveal any names for fear of embarrassment to the owner.  BUT it was found in a home in the Green Mountain vicinity on a Saturday night(hint, hint).

When Life Gives You Limes...

While working in Puerta Plata, Dominican Republic on the M/V Caribbean Mercy we had some locals working on board.  Samuel was a young guy (15) who was brought on in the galley (kitchen) because he came to work with his mom who worked in housekeeping and we could use the help and they could use the extra income.

Samuel's English was limited and so was my Spanish (although it was a lot better then than it is now) but we got along fine finding him tasks to do in the galley.

One day we got these tiny limes locally grown that were only about as round and big as golf balls, with many of them smaller in size.  About 100 or more came to us and I definitely wanted to use them but was concerned with the amount of time it was going to take to squeeze or 'juice' them.

Quick @ Home Fraps/Smoothies (blender needed)

Fraps:

The Basics- Use cold coffee, put 10 regular ice cubes into the blender, pour milk & cold coffee in to just below the top of the highest ice cube (adjust the ratio for your tastes), at this point I use caramel, chocolate, or some other flavored syrup to both flavor & sweeten pulse blend & listen for no more ice cubes bouncing around (time in between pulses allows 4 remaining chunks to sink back down), at the end give it about a 3 to 5 second 'on' blend...if it's too liquidy use less 'liquids' next time. But if you don't get enough liquids in the blender it's harder to get ice cubes blended. These make about 12 oz glasses of Frap.

Or find big cans of Cafe D'Vitta at Sam's or Costco (they have caramel, chocolate,...flavors) same directions as coffee drink except add 1 scoop (scoop that comes with it) and then add milk, blend (only use mix, ice, and milk. no reason to add flavors or coffee, unless of course, you want to). They are great 4lb canisters of the mix.  By the time you figure out how many Fraps this $10 canister of powder mix makes, it is WELL WORTH IT!

Additional things I do: Add more caramel sauce to it, Mexican or regular chocolate sauce, a few coffee beans to the blender for speckled look, add peanut butter, find the Dulce De Leche sauce in 'select' grocery stores...yum.

In my professional 'making and drinking' opinion, powders work better than flavored syrups to thicken Fraps and improve taste...Using powdered creamer IS NOT A GOOD IDEA, you will soon become tired of the 'taste' that comes from powdered creamer, try using some powdered milk.



Smoothies:
For quick smoothies use the same amount of ice cubes and 8 to 12 ounces of flavored yogurt.  Use vanilla or plain yogurt and add fresh fruits for a more customized taste.

Steal lots of BIG STRAWS - (McD's or Coffee Shop straws) haven't found that they sell the big ones in any stores yet so I just get a few each time I am at Starb*cks, Pete's, or McD's

This is not definitive...just a quick guide for my friends who asked. If you have a coffee shop friend get him to let you 'have' big buckets of Big Train powder mix.

Deep Fried Macaroni and Cheese

Terrible. I know its just terrible to make something so good and fattening and deep fry it for even more flavor. But what was also terrible is the recipes that I found when I googled deep fried macaroni and cheese. Some wrote about frying it in a skillet and adding ingredients and some wrote recipes that I believe they never tried like; use (a national known brand of) frozen macaroni and cheese and scoop it out of the foil package and bread it with white bread crumbs? How do you 'scoop' frozen macaroni and cheese? And just how did they bread it without a binder and being frozen? Terrible.

The recipes that sound good give you no pictures. And one recipe goes so far as to add meat, tomato, and...now how is that macaroni and cheese?

Train Birthday Cake (Estevam turns ONE!)

Recently I was talking with a friend about cakes and using fondant and it reminded me of a time in West Africa that I had to make my own...

Friends of mine, Tatyana & Rodrigo, had their sons’ first birthday while we were working with Mercy Ships aboard the Africa Mercy and Tatyana asked me to help with the cake.  Well I looked at some of the illustrations that she sent me by email from Internet pictures and I said, ‘Is this all you want?  You want me to do the whole cake?  I got a bigger idea…’

Of course Tatyana probably had so much more to worry about getting her child’s first party together so she freely gave up that project.
